Mama Tet Cooks: Chicken Tinola

Railey's fave.

Tinola has been one of his fave ulam ever since. I noticed that he loves viand with ginger and this is the first dish we tried to offer to him that has ginger in the ingredient. He got a little picky with veggies but with tinola, he can eat all the veggies included. 



This is a simple dish that has easy to find ingredients. Just what we need to have during this pandemic. We need to eat healthy and also cook food with simple ingredients.

INGREDIENTS

     1/2k. chicken
     1 small onion
     3-4 cloves garlic
     1 small ginger
     1 med. sized sayote
     lots and lots of malunggay


PROCEDURE

1. Saute onion, garlic and ginger. You can add fish sauce if you wish. I actually rarely use fish sauce but with this, I remember adding it.
2. Add the chicken and make sure to toss it front and back so that both sides are cooked well.
3. Add water or chicken broth. If you add water, you can add chicken cubes if you want. I did not add it here. 
4. When chicken is soft and cooked, add sayote. Bring to boil or wait until the sayote is soft.
5. Add malunggay or moringa leaves, the more, the merrier! It's the cheapest superfood so if you have that, put a lot. I just get moringa from our neighbor's plant and it's free!
6. Add salt and pepper to taste. Adjust it to your liking. I only added pepper because I already added fish sauce at the start of the cooking.

This dish is also my go-to dish whenever I am tired of cooking or doing household chores. Since it's easy yet very healthy, this helps me save time to think of what to prepare.

  3. I love this dish too. Although here we don't have sayote and malunggay I use spinach as alternative veggies. Masarap din itong ulam kapag maulan.

    1. Yup spinach or pechay for the leafy veggies or papaya in replace for sayote. The rule is kung ano nasa ref gora haha

  4. Now I know how to cook Tinola HAHA as I have read from the step-by-step instructions. It's pretty easy tho. I super like tinola, but I cant cook one hahaha

    1. Aaaww why? Perhaps you can add lots of ginger to remove the lansa and add the chicken and let it cook na without the water pa so it will be cooked on it's own oil. Mas malasa sya nun.

  7. Ang sarap ng tinola ngayon, especially sa sobrang lamig ng panahon dahil sa bagyo. I remember my mom with this tinola recipe. I wish i can be as good as my mom when cooking any dishes! 😅

  9. Yesterday, I cooked my first Tinola and it was far from perfect but I am proud of it. I do not have malunggay here in Jakarta. I need to go to a certain grocery to buy some. The hassle! So my lonely tinola somehow survived.

  10. Nung nag browse ako ng mga posts, yung tinola recipe agad yung nakita ko because it's my favorite! ♡♡♡ Pero napansin ko when I lived in Manila, iba yung timpla ng tinola ng mga katalugan compared dito samin mga kabisayaan. I don't know whyyy HAHA :D
